First Green is our most unique extra virgin. It goes under the name of "olio nuovo" (in Italian) or "Novello oil" which stands for "new, novel oil." This is since it's obtained from an early harvest of the olives when they're still green and unripe.

Novello olive oil is a premium quality olive oil that is well-known for its exceptional taste, aroma, and health benefits. This olive oil is made from the first cold press of the olives, which is why it is often referred to as “extra-virgin” olive oil. Novello olive oil is considered one of the best olive oils in the world.

 HIGH NUTRITIONAL VALUE

This EVOO is an elixir and our most refined product. High in polyphenols and flavors, it has a very limited production.  Novello olive oil is rich in nutrients that are essential for maintaining good health. WHAT IS THE MEANING OF THE NAME “NOVELLO” OLIVE OIL

First Green is our “novello” olive oil.

Novello is the Italian word for “novel,” although it is sometimes called “Olio Nuovo” or “Verdone” in Umbria. It’s the name given to oil produced from the earliest harvest. Traditionally, Novello oil represents a true celebration of the beginning of the olive harvesting season.

THE STORY OF THE FARMERS AND THEIR OLIVE OIL

All micro farmers own an olive tree field – called “Oliveto” in Italian – that they’ve often inherited and personally grow. They harvest the olives according to traditional centenarian methods. The oil comes in small quantities and is extremely limited in production. The growth and production methods don’t aim to force the plants to produce as much as possible.

They preserve ancient family traditions and create the very best olive oil possible, respecting the natural vegetative cycle of the plant for a well-balanced, sustainable production.

Our farmers like to say: “This oil is pure; there’s nothing more real and genuine you can get”.

Every bottle of our Vintage olive oil is truly unique in its own right. With this in mind, every olive oil we produce is slightly different due to varying seasonal temperatures and weather conditions in each specific geographical area. As such, the flavors and perfumes may differ year over year.
