DOP: A Specific Mix Of Olives
Our wonderful virgin DOP is a premium extra virgin olive oil combining a specific mix of olives. The geographical area of the olive trees is the "Martani Hills," which is located in Umbria.
Each step of the production process is closely regulated by the PDO official protocols and supervised by a regional commission.

More about DOP
DOP stands for “Denominazione Origine Protetta,” which means “Protected Designation of Origin” or PDO.
This label guarantees that the extra virgin oil is produced, processed, and packaged in a highly specific geographical zone. This is determined by the strict DOP protocol, “Disciplinare of DOP.”
The PDO specifications differ from region to region across Italy and outline the overall process of making premium olive oil, from the growing method to the varieties of olives and their blending processes.
The specifications are outlined and supervised by the national certifying authority.
Just as with premium winemaking, every certified DOP oil is a unique blend of olives from highly specific olive varieties, grown in a pre-determined geographical area.
Our Umbria DOP – PDO extra virgin olive oil is obtained from the Leccino, Frantoio, Moraiolo, San Felice, Rajo, and Dolce Agocia olive varieties.

Our extra virgin olive oil, DOP, from Umbria’s Colli Martani is an extremely versatile oil.
Its delicate fruity aroma is ideal for green salads, legumes, bruschetta, or roasted meat, and is ideal prepared to help exalt the flavors of every dish. We recommend using it in the same year as it was produced.
Directly from the oil mill to the comfort of your home, according to tradition.
Olive tree cultivation in Umbria dates back to the Etruscans, an ancient population found within the very heart of Italy.
The olive tree has always represented a biblical and universal symbol of peace. It also represents religious values, which are so important considering that Umbria itself is often referred to as the “Holy Land of Italy.”
Just think of the great Umbrian Saints, the sanctuaries, and the other magnificent religious buildings scattered throughout the region.
The olive tree, with its long lifespan and slow growth, is a fine representation of the region’s ability to preserve century-old traditions, handed down from generation to generation.
Genuine and Respectful of nature
Every bottle of our Vintage olive oil is truly unique in its own right.
With this in mind, every olive oil that we produce is just a little different, due to varying seasonal temperatures and weather conditions in each specific geographical area. As such, the flavors and perfumes may differ year over year.
ItalianRaw is our premium, unfiltered extra virgin olive oil. This is the most rustic, genuine product of the farmers. It’s dense and fruity due to the sediments that are left after gently pressing the olives.
Our unfiltered olive oil may have a cloudy appearance due to olive particles being suspended in the oil.
Talking from a health perspective, our delicious, unfiltered olive oil is rich in anti-inflammatory antioxidants, vitamins, minerals, and includes zero dietary cholesterol.
These antioxidants may be perfect for preventing various heart diseases, maintaining a healthy body weight, and providing balanced nutrition for the human body.
